I want to try making fruit wine.What’s the differences between all the kinds of yeasts out there?

I want to make apple wine or grape wine. Many recipes I’ve seen recommends the use of champagne yeast. I have Lalvin and I have used EC1118 in the past. I also have some K1-V1116 and 71B-1122.

Here are the ones I know:

1122 = This is good for wines that want to have a fruity aroma
1118 = This one is all purpose wine yeast
1116 = This one is for wine made from grapes and fruit
