What are the different types of red and white wine that I can use for each of these different courses?

I have a wine project to do and I don’t really know much about wine or drink them: I have to do five courses: appetizer, soup, salad, entree` and dessert. For the entree` dish, i need to pair it with a red and white wine to go with Braised short ribs, I need to know what specific wine red and white that is good with it. I need to know the type of wine it is not just by saying red wine is good for this dish. I need to have 1-2 sentence saying why iam using that type of wine. For the other courses, i just need either one red or wine. For my appetizer,it is going to be smoked salmon on toasted points with cucumber,cilantro and chive cream but i dont know what wine would go with this one and why. For the soup dish, gumbo with shrimp, what wine would go with this one and why. For the salad dish,Shaved fennel salad served with dill and grape tomaotes and a whole grain Dijon mustard dressing, what wine would be best for this dish and why. I need help in this assignment, can someone help me?
