I experimented with salmon last week, would you like to try it…?

I purchased a salmon filet and removed the skin. I put the salmon in a long baking pan (long enough to accomodate your piece of salmon) and I added white cooking wine about halfway covering the salmon, about a tablespoon of parkay, and some fresh thyme, salt, pepper, paprika, and a clove of garlic, And then I cut up red, yellow and green peppers in long strips and covered the top of the salmon with the peppers. I covered the pan with foil and allowed the salmon to cook for 25 minutes and then I removed the foil and allowed it to get a little crispy. I put this on a bed of white rice and OMG!!! It was delicious. You should try it.

Thanks Richard K-It’s a work in progress. I wanted the wine to soak into the peppers as well. Next time, I’ll try something different. A friend of mine told me to try OJ?? Never heard of it but it’s worth a try. I’m sick of chicken, hat’s for sure.
